Vegan Buckwheat Blueberry Flax Muffins

 A Friend on Instagram asked me about the recipe for the buckwheat Blueberry muffins I posted about awhile back. They are organic, gluten free, vegan, protein packed muffins filled with goodness!

Banana Blueberry buckwheat muffins
Ingredients:
1 1/2 cups buckwheat flour
1 tsp baking powder

1/4 cup oatmeal (use rolled oats or pre-cooked steel cut)
1/4 cup chia seeds

1/4 cup hemp seeds

1/4 cup flax seeds
1 Tbsp apple cider vinegar
2 Tbsp of Flax seed powder mixed with 6 tablespoons water
1 1/4 cup almond milk (use as much as is needed to get good batter consistency)
2 Tbsp maple syrup or brown sugar
1 tsp vanilla extract
2 - 3 very ripe bananas, mashed

1 cup blueberries
Preheat oven at 350 F. Grease a muffin tin with coconut oil.
2) Mix all dry ingredients (buckwheat flour, baking powder, oatmeal,

and seeds) into a medium bowl.
3) Mix all wet ingredients (ACV, flax powder/water combo, almond milk,
maple syrup, vanilla, mashed bananas) into a small bowl.

4) Blend well wet ingredients into dry ingredients.
6) Fill the muffin tin with batter and bake for about 15-20 minutes,
or until a toothpick comes out clean from center of muffin. Let the
muffins cool down for about 10-15 minutes before taking them out.

Eureka Natural Foods- We hit Eureka Natural Foods in the morning on the way out of town heading to SF. They have great juice bar with organic items. I got a green juice and a great post workout smoothie with Hemp protein. My buddy Greg from our crew was asking me why I get Hemp protein not whey. I’m a huge fan of plant-based proteins and whey is derived from dairy so it is not vegan. Gotta keep my post workout smoothie plant-based! The prepared foods section was a bit underwhelming but the salad bar and juice bar did the job. Overall, Eureka Natural Foods is a decent market and good juice bar.

PULP– Great juice and smoothie bar in downtown SLC. Prices are awesome (although not organic) I Love the options on the menu. I got a grasshopper smoothie with almond milk and hemp protein, which was a killer post workout drink. Also got a green juice, which was on point. My buddy also got an acai bowl. The only thing about this spot is that it is tricky to find! Kind of a strange location in a gym that’s in a big mall. You have to navigate through this shopping mall and find the correct elevator to the 3rd floor and the finally there is the juice bar located in The Gym. It’s worth the effort though!

 

WORKOUT- Tennis Round came through for me again in SLC and I found a good teaching pro looking to hit. We found some nice public courts in Liberty park that were empty courts but man, it was windy! Always beautiful to hit in the mountains though!
